Raw material is purchased daily from each village according to quality specifications and then shipped directly to the central packhouse in Bursa. The selection, sizing and prepacking is made by the production team under the frequent control of the QA team.

Alara has the most sophisticated optical fig packing lines in the World, handling 100 tons of figs per day. There are 350 workers packing per day during the season.

The final product is transfered into the cool rooms for fast air forced cooling. The shipments are organised daily according to marketing programs.

PESTICIDE RESIDUE SAMPLING

Pesticide residue sampling is done according to the risk analysis. The Bursa Black Fig production is almost considered chemical free but in case of any contamination Alara runs a pre-harvest analysis procedure in agreement with accredited labs providing the results in 24 hour prior to harvest.



HARVESTING

Harvesting starts early in the morning. Fruits are picked by hand one by one into clean harvesting buckets. Fruits in the buckets are transferred to raw material crates to be sent to the regional purchasing station.



PRE-SELECTION AT THE PURCHASING STATION

This is the station to sort out the fruits which are out of spec. The export quality is sent to the central fig packhouse in Alara crates in one layer to prevent any mechanical damage. Each crate has a grower traceability code.



DELIVERY FROM PRE-SELECTION STATION TO CENTRAL PACKHOUSE

Fruits are transferred to the central fig packhouse by refrigerated trucks set at 10-15 C. Unloading is done by logistic personnel as soon as the truck arrives.



INTAKE QC

Intake QC team takes samples randomly from each village and analyze them according to the ALARA Raw Material Intake Specs.



RAW MATERIAL STORAGE

Fruits are stored in pre-cooled area which is around 15C until get packed. No one has this kind of raw material storage area.



PACKING

Packing is done by TWO OPTICAL AUTOMATIC FIG SELECTION LINES which are unique for Alara. The figs are weighed for size while maturity seperation is done by optic cameras. After this process, the final product becomes quite homogenous in regard to size and maturity. The packhouse is around 15C.



PACKHOUSE QC

The final product is controlled by the QC team and findings are projected on the processing room wall by ONLINE-REAL TIME QC system where packing personnel react proactively for immediate corrective actions.



FINAL PRODUCT STORAGE

The final product is stored between 0-2C. The flesh temperature of fruit drops down to 1-2C by the next morning. The product is stored in the rooms on shipment basis for each order.



LOADING

A full truck loading takes max 15 min as the storage rooms are just next to the loading platforms. The truck comes in to the platform which is sealed with inflated bumpers to minimize temperature fluctuation during loading SENSITEC
